Just thought I would share something I was asked to write for the Too Many Cooks in the Kitchen Cookbook project. we were asked what our favorite tool was when it came to cooking... "My favorite tool…tough choice in a way…we all have our favorites my wife’s is a family heirloom a fork! Mine is the thermometer specifically the pocket probe thermometer… a measuring device that keeps me in control. I carry at least two. I have a saying posted in my office that says “ Food is power…Are you in control of yours?” Like knowledge is power, knowing what and how and why is important. In my job Food Safety is non-negotiable. Serving safe food is NOT an option. I believe it is our obligation as food service professionals. Food safety is an important part of our relationships with our families, customers, employees and vendors. It incorporates mutual respect and trust . The way I put it is…Food Safety is how we show the Love. That’s how we show how much we care. I encourage all who read this to get one...they are cheap and effective insurance. In these days of newly emerging pathogens, changing demographics and an increasing demand for ready-to-eat food products the risk of foodborne illness is one faced by everyone. Enjoy food and relish in the fact that it is safe! "

Hi Guys What's with all the happy face icons that open onto a poker site? I guess thats one of the drawbacks to having a website where we can all communicate with each other. Take the bad with the good. Anyways, Leo has a great topic here. I use a thermometer in the kitchen and couldn't get by without it, but my favorite tool is a canneling knife. I have had mine for 30 years and would not know what to do without it. For those who don't know a canneling knife is a small hand held tool with a protruding blade, that scores fruits and vegetables. Particularly useful with Melon and squash carvings. Carrots scored with one look like cogs and cucumbers cut with it on a salad look great and make it appear a lot more work went into it. I keep deleting them, but they keep coming back. Anyway, if it continues I'll just switch so that no unregistered users can use the forums.About gadgets like that, I like my canneling knife too. Ever use a parisienne scoop for your vegetables? It's a miniature melon baller, and although time consuming, it makes for a great vegetable garnish for pastas, risottos, and more. IP: Logged |

Hi Ira I forgot all about those little parisienne scoops. I remember doing a dinner a few years ago, where we carved 4"x2" cubes of turnip into treasure chests with lids and filled them with vegetable pearls made with the tiny scoops ( carrot zuchinni and turnip) Boy my hand still aches,but they did look good. Little imps...we just pray that whomever it is they are responding to the light...and searching for Jesus... I like that idea carving out a turnip and doing that, as painful as it may sound.The adventure is going really well. The excitement continues as we prepare to open on wednesday. I've been working long days getting everything ready... Last night I was rolling fresh pasta (angel hair, sheets for lasagna, and raviolis) until 2am! Also we're a bit too far out of town for most pervayors to go, so other than a once-a-week meat delivery, I need to pick up all the food. IP: Logged |
