When does everybody feel that it's important to wear gloves in the kitchen? All the time, just during service, never??? And why?

In most places I have worked gloves are worn when plating up cooked foods for banquets. I like to wear them when handling raw chicken as well. Proper handwashing is still a must when changing gloves, though people often forget.

Important...depending on your operation...we have a large clientele...who passes by our food servers...we wear gloves when we serve. We also stress handwashing and we wash before and after using gloves. I believe it to be a statement that we care about our serving...and a reassurance to our guests. During food prep I like gloves but not for everything..Its hard for me to handle a knife with gloves..so I do not. If I am switching tasks rapidly I keep a pocketfull and that way I am ready for anything. But at the same time I wash often and even if you are using gloves...we wash inbetween tasks...gloves or not.
