I had to make pastillage decorations for a red velvet wedding cake this weekend and I haven't made the recipe in about 11/2 years.
Anywho, I thought y'all would love to have this perfect recipe. Any questions you have I know most of the tricks...email me

PASTILLAGE

7# 10x powdered sugar
1# cornstarch

1# water (1 pint)
1 3/4 ounce gelatin (granulated)
1 Tablespoon lemon juice

Mix and sift cornstarch and powdered sugar into a 20qt mixer fixed with a paddle attachment.
Bloom gelatin for 5-10 min in cold water. Melt over simmering water add to sugar starch. Add lemon juice. Sometimes you have to add more powdered sugar. anyway mix for 2-3 minutes until smooth. Scrape in small batches into ziplock bags. Rest overnight at room temp or at least 3-4 hours. use cornstarch for bench dust and try to roll in small batches. whatever your use make sure bench is very clean and if possible roll on plexiglass or marble for best results. I have made many types of flowers, houses, churches, petite four boxes with lids, bowls, bowls, plates tea cups, saucers, platters for fancy cookies vases, you can use ceramic molds and make anything you can think of. Hey Chef Bob..had a question from a Sister who is taking decorating classes..."I am looking for better tasting rolled fondant because I think this stuff has NO taste. I am going to be working in flavor oils to see if I can help it out."
Any advice form anyone?

Order Fondex...the newest and good tasting fondant. Also white chocolate fondant. I have a recipe that is good but not worth making...buy the stuff.

ONe note when I looked for price you have to log in with a Tax ID or proof of business...they are a wholesaler...
