Does anyone have any good recipes utilizing sweet onions?

In Alabama we simply bake Vidalias in a hotel pan with a little chicken stock on the bottom, make an X slit on top and pack with a knob of butter salt & pepper and fresh herbs. cover with foil and bake 45 min. SOOOOOOOOOOOOOOOOO good and if they are a bit flat and not too big I put one in the center of the plate and set a grilled fish filet or beef tenderloin, gives lots of height.

That reminds me ...when grilling / smoking outside I like doing potatoes and whole onions...often dabbing with whatever BBQ sauce I am working with at the time..adds a little color/taste to the outside adding to the roasted outside and sweet sweet inside.
I also remember a scalloped onion dish I had and replicated a long time ago..thanks for reminding me!...onions fairly thickly sliced shingled/layered and covered with a little veloute' or bechamel and baked till golden and onions were fall apart done. I need to try that again!

We did a apple cider onion soup. We used the sweet red onions. Little bit of chicken stock, carmelized red onions and apple cider with pepper. Yum

Hi all
Yes, carmelized sweet onion and cheese tart. I like to take a 10/15 or Vidalia onion and slice it very thin, sautee it in butter with a tsp of sugar until it carmelizes and fill a 9 inch pie shell. Beat together 1-2 eggs and 1/2 cup of cream salt and pepper and add to the pie shell. Bakes like a Quiche. Top with the cheese and bake until melted. Slice and serve with fish or meat.

Thanks for all the ideas. We have a sweet onion marmalade on our menu as well. First we lightly caramelize sweet onions in butter, then deglaze with a good deal of red wine. The marmalade comes out bright red, is sweet, and very tasty.
