I'm looking to redo the "Books" area of CCF to have more and better recommendations. It's hard for people to know which books are good and which aren't, so I want to expand our recommended books to share with people from our combined expertise.

My first question is what categories do you think I should have. Should I add recommended books on every different category (sauces, soups, herbs, potatoes, each ethnic cuisine, etc.) OR should I have a "10 books every professional cook/chef should have" OR should I have a combination of both???

Either way, please share with me some of your favorite foodie books.

Thinking through the question myself I would say:
The New Professional Chef
Larousse Gastronomique
On Food & Cooking
Food Lovers Companion
ServSafe Esseentials
Bread Bakers Apprentice
Professional Pastry Chef
(yes, even chefs should know a thing or two about breads & pastries)

Add this for people who cook in larger quantities:
Food For Fifty

And these magazines:
Cooks
Art Culinare (only for those interested in fine dining style foods)

Hi Chef Ira,

I think a combination of both...and while I'm at it, here are my top 10. (It's tough to pick just 10.)

* The Fundamental Techniques of Classic Cuisine by The French Culinary Institute
* The Physiology of Taste by Brillat Savarin (Translated by MFK Fisher)
* Professional Baking by Wayne Gisslen
* The Bread Baker's Apprentice by Peter Reinhart and Ron Manville
* Grand Livre de Cuisine by Alain Ducasse
* Herbs and Spices: The Cook's Reference by Jill Norman
* The New Making of a Cook: The Art, Techniques, And Science Of Good Cooking by Madeleine Kamman
* On Food and Cooking by Harold McGee
* The Flavor Bible by Karen Page and Andrew Dornenburg
* Sauces by James Peterson

Magazines recommendations:
Plate
Food Arts
Art Culinaire

Blessings,
mz

MZ, please don't limit yourself to 10. I'm open to all ideas to get this to be a fairly inclusive list of only the best foodie books. The top 10 was more about the "must have" list.

Hello Ira,

I haven't really chimed in because I started on, and still have, and love most of the books you already listed...trying to think of anything new...hmmm.

It took a bit longer than I had anticipated, but I'm almost done redoing our Recommended Books area. Thank you again for your help with this.

Please check out the books area and let me know what you think: http://www.christianchefs.org/books

Specifically look to see if I missed any very important books and let me know if you like the category names.

Mary & James - there are some books your recommended on there. Would you mind getting me a short recommendation on those? (see the other recommendations I wrote for approximate length).

Also if anybody wishes to write a recommendation for any of the books I haven't gotten to (if you know the book & like it of course), please do so. You can post everything here or via the "Contact Us" link.
