Hey guys need a little help i have a youth retreat this weekend, and i need some ideas for cheap food , but good. It is high school and i order on wednesday. I have five meals meals all day saturday and sunday through lunch. i have thought wings. I also thought about hambugers but that is so over done. I want some thing differnent but cost affective. the numbers are 250 i have me and three help. my cost per meal is 5 for breakfast 6 lunch, 7 dinnerhelp if u can blessing, the fat from Texas Ray IP: Logged |

Hi Ray! That's actually not too bad of a budget. Just remember that what money you don't spend on one meal you can spend on another. Therefore you can easily do a fairly basic breakfast and lunch menu one day, then splurge for steaks that night. I'm sure the retreaters won't mind.First off, if you can get ahold of the book "Food For Fifty", you'll be able to get a ton of recipes that are geared towards alot of people with cost restraints in mind. Other than that, youth love burgers, pizza, wings, etc. But you don't have to do the same old thing - make a really nice build your own burger bar. It won't cost that much more, being almost all produce. Pastas are great too. In addition, I don't know how much help you have, but be careful not to get over your head in work for your menu. That's 1250 meals in only two days! IP: Logged |

Sorry to go off topic but i just relized bigfrc is like 2 hours away from me. Anyways back on topic why not do something like pizza. You can use the sheet pans spread the dough on there. Also what about pasta bar with a couple differnt sauces and pasta. Another thing is you could make a huge batch of tomato or marinara sauce and use for both the pizza and the pasta. IP: Logged |

This is some good ideas, pasta bar might go over good and it is cheap, where are you at that u are just two hours from me? IP: Logged |

Pasta bar is one of the great meals I use on the ship (as already said here)-- but here is another spin along that line-- and sometimes I have a meat like chicken or shrimp (flavored and cooked) but separate, then I usually make an Alfredo sauce, a creole sauce, one type of pasta (usually spaghetti), rice, then a vegetable...plenty of choice to love at a cheap price...meat, no meat, red sauce, white sauce....etc...Buy picnic shoulder and slow cook it starting in the morning (200-225F), it will fall apart by afternoon, (flavor with a little hot sauce, or a little BBQ sauce and vinegar) for a pulled pork sandwich, Baked Beans, coleslaw...corn on the cob or just corn? add extras like potato chips, banana pudding (you know with the wafers and cool whip) Taco, Nacho, Burrito Bar (Flour tortillas, Crunchy Taco Shells, and nacho/corn chips)...liquid cheese, shredded cheese, olives, sr cream, salsa (i make a great homemade one out of canned stewed tomatoes, cilantro, garlic, jalapeno, & onion in bulk)etc... meats of your choice, go beef (ground or strips) & Chicken, refried beans (could use black beans)spanish rice or a rice pilaf of sorts (with a little tumeric to give it that yellow rice mexican restaurant look), diced onion, lsiced Jalapeno's...once again, variety, choice, vegetarian options... Not to mention none of these are too pricey. Try a soup, salad, and baked potato bar (but make and really get some good looking and sized potatoes) for one of the lunches, preferable the last lunch then you can use all the 'food & condiments' from the above dinners to create all your extra toppings for the baked potatoes. (give them a good breakfast on Sunday morning and this will be all they can eat by lunch time -- YES even youth--) LIKE I SAID BIG POTATOES ...there cheap right? comparably so. -- this lunch meal also uses some of the same ingredients above and is low cost... Another great lunch idea -- buy crescents and foccacia bread and maybe a nice multi-grain already made, (or Sysco has a nice ciabatta)...use cold cuts and salami/pepperoni with sliced cheeses and olive salad (with the foccacia) to make a Muffaleta style sandwich, make a sliced chicken or turkey with bacon on the crescent (nice tomatoes and dark green lettuce) and maybe an all white alba tuna-fish on multi-grain...accompany with chips and pretzels, multi colored rotini pasta salad, potato salad, &/or premixed salad (an Asian tasting slaw or marinated vegetable salad) nothing mayonnaise-ee...finish off with a raspberry brownie with caramel sauce & some chocolate chunk cookies. -- this lunch meal also uses some of the same ingredients above and is low cost... Variety, presentation, colors, textures...WOW with a low budget. Already sliced deli meats, green and black olives by the number 10 can, pasta, rice, cabbage, potatoes...low cost at bulk, pre-made breads... anyway, let me know if you need more, I might end up writing a book if I don't stop.
