In the Federal Service we have seventy Culinary Schools Nationwide. My job was to start the Culinary school here at Lyndon B. Johnson and implement the plan to guide and supervise the performance of the department. I selected all office, kitchen and dining room furniture and equipment. Set up the flow of the department for efficiency. Set up the syllabus for the curriculum, teach sanitation, dishwashing, measurements, food prep., knife skills, pantry cook , station cook, and cook hotel restaurant skills. Which include three hundred and twelve other, skills. From sauté , soups, sauces to food costing. I established in the program work base learning, social skills , counseling and leadership training . Computer skills used daily, Case Management, CIS. and SST. Training, all on Microsoft. Budgeted the Department, and did all purchasing and receiving. We Catered Events in the surrounding area. Made all menus and work schedules. Established a Work Base Learning Program, Employee Evaluations, every 90 days, set up a video learning room and had inspections every 90 days. Taught a Serve Safe Certification program. While doing this I owned and operated my own Restaurant called The Old World Cafe, which served lunch only, and worked as a Chef at the Frog & Owl Bistro at night, which has a five star rating.
