Hi Nick - it's nice to have you here. What type of establishment are you at there? I learned alot about Italian cooking while working at L'Unico there in Balmain under Chef Danny Russo. I know he doesn't own it anymore, but have you heard of him anyway?

I was only there for a few months, but I loved Australia!

Always great to come across another Christian Chef. I have never been to Australia, but I hear it is a great place to be. Is Australian local cusine something we might find Anthony Boudain sampling one day?
