   A P P E T I Z E R

Well, I'm happily married and back to everything with life, work, and CCF. Thank you all for your prayers.

That being said, yes, there still is something new this month -- something that's been requested quite often actually: a Christian Chefs Local Groups section of the website. This section describes everything about local groups in general (what they're all about), attending local groups, and even how to start a local group. Visit the following link if you're interested in meeting other Christian cooks and chefs in your local area.

God's Perfect Timing

"Rest in the LORD, and wait patiently for Him;
Do not fret because of him who prospers in his way,
Because of the man who brings wicked schemes to pass.
Cease from anger, and forsake wrath;
Do not fret--it only causes harm."
Psalm 37:7-8 NKJV

Ever wonder why God oftentimes answers our prayers telling us either "no" or "wait", when, with all our understanding, it seems to be what's best? Sometimes it can be a bit discouraging and even frustrating to wait while it seems nothing is going forward in life.

Even David got to this point many different times. Not knowing why God was allowing him to go through all those trials, He cried out from all the pain and suffering Saul had been putting him through wondering why all his enemies were defeating him. But with every such example in the Bible, these experiences worked out for good. God used that experience to strengthen David, bringing him to trust in God alone for his strength rather than himself or other men, which is a trait required for the great role God was to work through him to make an impact on His kingdom both then and now.

What about where you work? Have you ever wondered why God doesn't open the door to a promotion or to work in another kitchen when it seems that you have nothing more to learn in your position and it seems best to move on? Ever wonder why you're struggling so much even though you haven't done anything to deserve it? That's because it's all about God's perfect timing, not ours, allowing God's perfect will to be done through some not-so-perfect people.

Sometimes the best way to understand this is to look back a couple of years in your own life. Looking at mine, I remember a few years ago I was wondering why God had me working in the same restaurant so long when things seemed to be going so terribly. It ended up that I learned a great deal there (both in the kitchen and in my spiritual growth through the struggles I went through), and if I had taken another job during that time I probably wouldn't have had the opportunity to live and cook in France and Australia. And if I hadn't lived there and done that I wouldn't have met the wonderful woman who is now my wife! It's amazing looking at how much better God's perfect timing is than my own perceived "perfect timing", as "there is a way that seems right to a man, but its end is the way of death" (Proverbs 16:25, NKJV)

><> ><> ><> ><> TRIVIA <>< <>< <>< <><

First, this newsletter's question:

Where does the word "Restaurant" come from?

E-mail your answer to "trivia@ChristianChefs.org" with "Trivia Answer" in the subject column. Also, please tell us what brief title(s) ("Sous Chef," "Dallas, Texas," or whatever - see examples below) you would prefer for your name being listed in the next newsletter, as well as how difficult you found the question (so we can improve future trivia questions).

Solution to the last newsletter's trivia question:

Question:
What happened when 42 children laughed at Elisha because he was bald?

Answer:
Two she-bears appeared and mauled them.

Additional information found/submitted on the subject:

Right after Elisha cleansed the entire city of Jericho's bad water from the source, "he went up from there to Bethel; and as he was going up the road, some youths came from the city and mocked him, and said to him, 'Go up, you baldhead! Go up, you baldhead!' So he turned around and looked at them, and pronounced a curse on them in the name of the LORD. And two female bears came out of the woods and mauled forty-two of the youths. Then he went from there to Mount Carmel, and from there he returned to Samaria."
2 Kings 2:23-25 (NKJV)

The first five people to answer this question correctly:
1. Darrell Riley, Executive Chef - Near Fort Worth Texas
2. Lorraine Bartlett
3. Phil Bettencourt Jr.
4. Dave Longacre, Food Service Director
5. Carla, Personal Chef - Stamping Ground, Kentucky

Chocolate Truffles
Author: Ira Krizo
Yield: About 100

I looked through many different classical recipes to make this recipe for my wedding a couple of weeks ago. I was told numerous times by people that these are the best truffles they've ever eaten. And they're easy to make, too.

Ingredients:
2 lb 13 oz (1.3kg) Semi-Sweet Chocolate
5 Tbsp (75ml) Milk
1 lb (450g) Butter, diced
3/4 cup (180ml) Coffee
10 Egg Yolks
1 cup (240ml) Cream
Your choice of Coating Ingredient(s)

Procedure:
1) Melt the chocolate with the milk only until smooth in a bain marie. Cooking any longer will burn the chocolate.
2) Add the butter and mix well.
3) Add the coffee.
4) Slowly add the egg yolks and mix well.
5) Add the cream. Stir well.
6) Place in a bowl and let cool overnight in the refrigerator.
7) Scoop the chocolate mixture into walnut size pieces and round them off by hand. Place back in refrigerator for 30 minutes.
8) To finish, coat the balls with your choice of ingredients. The above picture has half of the truffles dipped in chocolate to form a hard shell and the other half rolled in cocoa powder.

"Prayer"

"Hi to anyone out there. I am really discouraged as my dream of becoming a fulltime chef is fading. I would love to attend one of the culinary schools yet $$$ are a problem. I am married with a 2 year old daughter and with the work I'm doing now I have no way to fulfill this dream. Age is also becoming a factor as I would be competing against some 20-25 years my younger. Please pray for me as I seek God's work in this venture."

You are welcome to respond to this message in the "Prayer Requests" section of CCF's message boards:

If you're searching for particular instructions or cooking techniques or maybe have a special need, you can post these on our message boards. If you've done that and are still in need, please e-mail us and let us know so that we may highlight that need in this section of our next newsletter.
