Praise God!!! Now that the ball is rolling for the fellowship, it's not stopping! We've decided that the newsletters will be sent out on the 1st and 15th of each month. Many of the "Ideas for future newsletters" shared in the last newsletter have already been put into effect, as well as some new ones. For example, see the "Christianity in the Kitchen" section below, which will be continued in future newsletters. We welcome suggestions for anything that you'd like to see addressed in that section.

CHRISTIANITY IN THE KITCHEN

As a Christian working in professional kitchens, I sometimes find it quite difficult to stand up for what I believe is right and true. Most of you know that a lot of the talk that goes on in the back of the kitchen is very degrading to our Heavenly King.
There are many characters in the Bible who stood up for what was right, no matter what others thought or did. I think of one named Daniel. He was surrounded by sinful acts, but did that ever stop him from worshipping his Father in Heaven? NO, it didn't! In fact, when he was told to bow before other gods, he refused, and was punished. But God honored Daniel's faithfulness and saved his life. (Daniel 6)
Why not have that same kind of faith NOW!!! Just like Daniel did back then! Take a look and see what you can change to make your time at work more glorifying to God.

IM, ICQ, AND E-MAIL EXCHANGES

We have a number of members on AOL, and others that have ICQ (a chat program). There has already been some interest within this fellowship to exchange names. If you are interested in joining in this program, please contact us via e-mail. Please state what you would like to exchange (e-mail, ICQ number, etc.) and with whom you would like to exchange (example: one or two people or anyone who is interested). We will reply with like information.

CHATROOM

God is still providing us with two scheduled chat times per week. Because of the two hosts' varying schedules, we don't always meet at the same exact time every week. However, we will be sending a separate e-mail every week or two to inform everybody of the scheduled chat times. This coming week we are meeting Wednesday, October 7th from 9:30 to 10:30 PM and Thursday, October 8th from 11:30AM to 12:30PM (Eastern Time). Those times are also posted on our Chatroom page. FORUM

As mentioned in the last newsletter, we have a forum with a variety of topics, including "General", "Prayer Requests", and "Recipes" sections. Since the last newsletter, we have also added a new section, "Questions and Answers". In this section, you may post any question you have about food or theological content. All are welcome to post both questions AND answers here. Just a note: one of the recipes posted in the "Recipes" section during the time between two newsletters will be put in the forthcoming newsletter.

FEATURED RECIPE

Lamb Dolmas (Stuffed Grape Leaves)
Yield = 10 servings

Ingredients:
Garlic, chopped = 1 oz
Onion, fine dice = 12 oz
Butter, unsalted = 4 oz
Salt and Pepper = to taste
Allspice, ground = 1/3 tsp
Cinnamon, ground = 1/3 tsp
Rice, long grain, uncooked = 12 oz
Tomato Concassé = .5 lb
Lamb, ground = .5 lb
Parsley, chopped = 1 oz
Pine nuts, roasted (optional) = 1 oz
Grape leaves, rinsed = 50 ea
Vegetable Stock, to cover = 1 qt
Lemon Juice = 3 oz

Method:
1. Melt the butter in a medium sauté pan or skillet over low heat.
2. Add the onions and cook, stirring occasionally, until translucent.
3. Add the garlic and spices and cook a few more minutes.
4. Let cool about 10 minutes.
5. Combine the onion mixture, rice, ground lamb, pine nuts, tomato, and parsley in a bowl.
6. Snip the stems off the grape leaves and place them smooth side down on a table.
7. Shape about 2 t of the lamb filling into a cylinder and place near the stem end of a leaf.
8. Repeat with the remaining filling.
9. Fold the sides of each leaf over the filling, then roll into a cylinder.
10. Arrange leaves seam side down and close together in a single layer in pans.
11. Pour the lemon juice over the Dolmas in each pan. Then add hot water to just cover.
12. Weight with another clean pan to keep them from unrolling.
13. Heat the liquid to boiling and cover the pans.
14. Reduce the heat and simmer the Dolmas to an internal temperature of 155°.
15. Uncover the Dolmas so that they can cool some and serve warm.
